Grated zest lime
700g mixed flat fish
1 egg beaten
100g fresh breadcrumbs lightly toasted
200ml plain yoghurt
1/2 cucumber chopped
1 red onion
4 tomatoes
1slice red cabbage
3 cloves garlic
8 tortillas
Crispy lettuce shredded.
Cut fish fillets into 1 cm gujons
Sprinkle lime zest over them
Roll in egg and then breadcrumbs
Place on tray with a drizzle of oil
Put in hot oven or under grill till crispy 5 to 10 mins.
Meanwhile heat tortillas
Place spoonful of salsa and tzatziki to each tortilla with a handful of lettuce.
Place 3 or 4 gujons in each tortilla. Wrap and serve.
