This is a really tasty and easy version of bought pies. As with all the other recipes alter it to suit your needs. The pastry is made with self raising flour or plain and bicarbonate of soda which gives a lighter crumblier texture.
For the pastry:
225 g self raising flour or 225g plain flour and 2 teaspoons bicarbonate of soda
80g of soft butter
cold water to mix - this depends on the flour and how warm the room you are cooking in, but as a guide a few tablespoons added one at a time.
For the filling
2 onions chopped
750g stewing steak
2 tbsp. plain flour
1/2 tsp mixed dried herbs or 1 tsp fresh herbs chopped
2 tsp brown sauce or home made plum ketchup
425ml stock
225g chopped mushrooms
Dry fry onions for about 5 mins till soft and transluscent
Add cubed steak and fry till brown
Add flour and stir. Cook gently for a minute or two
Add rest of ingredients mix and bring to boil
Simmer for 4 or 5 minutes till thickening.
Place in oven for 1 1/2 hours till cooked and meat soft
About 30mins before meat is ready make pastry.
Put flour in bowl, with bicarbonate of soda if using
Add cubed butter
Mix and then rub floured butter between finger tips to make a mixture a bit like golden bread crumbs
This will probably stick together but then crumble apart so add a tablespoon cold water and mix
Keep doing this till it becomes one piece of dough but not sticky.
leave to rest at room temperature for 5 minutes
Roll out to 28cm2 and about 0.25 - 0.5 cm thick
Now place steak in a 26cm2 pie dish
Moisten sides of dish and put pastry on top
Fold over edges and pinch in
Put three slit holes in centre of pastry with knife
Put in oven at 220C GM7 for 30 - 40 mins.
