Makes 10-12
4 slices smoked bacon
175 g plain flour
2 tsp baking powder
1/2 tsp salt
50g unsalted butter
125 g mashed potato
50g strong cheddar
1 tsp oregano
Milk to glaze
Dry fry bacon until crispy.
Place flour, baking powder, and salt in a bowl.
Rub in butter.
Add potato, bacon, oregano
Mix to a firm dough. If a little dry add water a tsp at a time.
Knead to a dough.
Roll out to 1.5 cm, cut out 6cm scones
Place on baking tray
Bake 10-15 mins at 220C or GM 7
